Vegetarian One Pot Meals: Mushroom Bhaaji

Mushroom Bhaaji - an easy one pot Indian mushroom curry recipe

This recipe is taken from Madhur Jaffrey’s Curry Easy - which is featured in our top ten most useful cookbooks article (click the link to see the others). Madhur describes a true bhaaji as simply meaning a “vegetable dish” and the normal bhajis we find in the UK are actually Bhajia which just means fritter.

This dish is creamy and unctuous from the yoghurt, fragrant from the herbs and cumin and meaty thanks to the mushrooms. It goes exceedingly well with our Rajah air-fryer tandoori wings, and is delicious scooped up on naan breads and rice.

This recipe only takes around 15 to 20 minutes to make and the amounts shown below will serve 3 to 4 people as a side with other elements. It only uses one pot (we always use our Le Creuset wok, it’s amazing) - so barely any washing up!

One Pot Mushroom Bhaaji Ingredients

  • 3 x tbsp olive oil

  • 1/2 x tsp whole brown mustard seeds

  • 1/2 x teaspoon whole cumin seeds

  • 2 x whole shallots finely chopped

  • 285g x mushrooms chopped - we’ve tried white and chestnut and both are lovely

  • 1 x clove garlic. finely chopped

  • 3 x tbsp natural yoghurt

  • 1/8 tsp x cayenne pepper

  • 1 x tsp ground coriander

  • 1/2 tsp x salt

  • a handful chopped coriander

How to make Madhur Jaffrey’s Mushroom Bhaaji Vegetarian Curry

  • Pour the oil into a frying pan over a medium heat

  • Add the mustard and cumin seeds and when they start to pop add the onion

  • Fry until beginning to brown and then add the mushrooms

  • Take the pan off the heat and then add the garlic, yoghurt, cayenne, ground coriander and salt

  • Put the pan back on the heat and stir thoroughly. Keep cooking until the yoghurt is dissolved

  • Stir in the fresh coriander at the end and serve.
