How to make air fryer scotch eggs

Making a scotch egg in a Ninja air fryer

Scotch eggs are such satisfying lunchtime or picnic meals/snacks. The recipe has a long tradition in the UK as “scotching” was a way of taking subpar meat or ingredients and improving them with salt and flavourings. It is one of the ultimate picnic foods, but in recent years has also popped up across the UK in gastropubs as a starter. The traditional way to make a scotch egg is seasoned sausage meat, breadcrumbs and then deep fried in oil. You can tinker with the recipe to include black pudding or haggis or replace the sausage meat with salmon for something a little more refined.

Here we’ve used our Ninja Foodi air fryer to cook the scotch eggs. This has, we are delighted to see, improved our final result each time. The eggs come out crispy on the outside and perfectly jammy inside. This is because the control and consistency of heat is excellent.

Air fryer scotch egg ingredients

  • 400g sausage meat

  • 1 x pinch English mustard powder

  • 1 x tsp Rajah black pepper

  • Pinch Sea salt

  • 180g x Panko breadcrumbs

  • 2 x tbsp plain flour

  • 2 x eggs, beaten

  • 4 x eggs for boiling

Air fryer scotch egg recipe

For the sausage meat

  • Place the meat in a bowl and add the black pepper, salt and English mustard powder.

  • Wet your hands and then smush the sausage meat to thoroughly mix the ingredients.

  • Take a small piece of the mixture and fry it off, then taste. Adjust the seasoning accordingly.

  • Take a handful of meat and flatten it out in your wetted palm. Ensure the amount is large enough to wrap around the boiled egg.

For the Eggs

  • Boil the eggs in water for around 5 to 6 minutes - NO LONGER. The aim is to keep the eggs soft boiled. Once the timer has gone off, rinse in cold water and drop into a bowl of water with ice in. This is to stop the cooking process.

To create the scotch egg

  • On three separate plates sprinkle out the plain flour, the beaten egg and the panko breadcrumbs.

  • Peel a boiled egg. Be very gently with it, it needs to remain intact.

  • Take a flattened disc of meat, wrap it VERY GENTLY around the egg until it is completely covered and squeeze the edges together to close.

  • Now to breadcrumb. Roll the meat and egg in flour, then in the beaten egg and then in the panko breadcrumbs.

  • Knock off any excess gently and repeat to create a very crispy double crumb.

  • Repeat this process for the remaining eggs and discs.

To cook the scotch egg in the Ninja air fryer

  • Preheat the air fryer on the air fryer setting to 180 degrees, this means turning it on for about 5 minutes before use.

  • When ready, spray or coat two scotch eggs in sunflower oil, don’t drench them, just a tiny amount and put in the Ninja. close the draw. Cook for 10 minutes or until starting to go golden.

  • Set the air fryer to MAX setting and then put on for another 3-5 minutes

  • When golden brown remove and serve!
