How to make salt and pepper crispy chicken wings
This recipe adapted from Kitchen Sanctuary is a delicious way to make Chinese salt and pepper chicken wings at home and even better - in your Ninja Foodi air fryer!
Chicken wings are one of the cheapest cuts of meat in the supermarket. The average box contains between 12 and 18 chicken wings and only costs around 3 quid. They are tasty and are good protein. This means you can feed a group of people easily and cost effectively. Combine that with the savings made through cooking with an air fryer and you’re laughing!
This recipe uses very simple ingredients common to most kitchen cupboards, cornflour, Chinese five spice, paprika, garlic salt and ground black pepper. By having both a dry rub and a wet batter, the wings take lots of flavour while still retaining the coating for the crunchy bite.
Ingredients for Chinese salt and pepper chicken wings:
Feeds 2 as a main course with side.
6-8 chicken wings
30g x cornflour
1/4 tsp x baking powder
1/2 tsp x garlic salt/garlic powder
1/4 tsp x ground black pepper
1/4 tsp x paprika
30g x plain flour
1 tsp x Chinese five spice
1/2 tbsp x Chinese rice wine vinegar
60ml cold water
1 x tbsp sunflower oil for air frying.
Recipe for salt and pepper chicken wings:
On a plastic chopping board, cut through the main joint on each wing so you separate out a winglet and a drumlet.
In a bowl, weigh out the cornflour and baking powder.
Add in the paprika, black pepper and garlic salt then stir to combine.
Dredge the wing pieces in the flour mixture until completely coated and transfer to another plate.
With your remaining flour mixture, add in the plain flour, Chinese five spice, Chinese rice wine vinegar and water. Stir completely until there are no lumps.
Pre-heat your Ninja Foodi Max Dual on the Max Crisp setting at 240c. Leave the setting at 15 minutes cooking time.
When it is warm (five minutes max), place the wings in the drawer and close.
After 5 minutes turn the wings, and repeat every five minutes for the 15 minutes cooking time. Make sure they don’t lose their batter in the drawer or that you lose too much heat from the fryer when opening it.
Once cooked, remove from the drawer and serve with your choice of dip. Alternatively make this really authentic by stir frying garlic, chilli and spring onions off to coat your wings in.

We now don’t deep fry at all, as the design of the Ninja Foodi means that both dry and wet batters can be air fried. It has a multitude of settings, but the most common ones for us are max crisp, which is great for things like chips and chicken wings, or air fry - which is very good for everything else.
